Absolute Pecorino with Black Peel

Pecorino with absolute black peel is a classic pecorino made from raw pasteurized sheep’s milk, rennet and salt. The seasoning varies from 12 to 18 months. It is very soft inside thanks to the black rind that acts as a protection from external agents and so that it does not dry out too much during aging. The black peel, the “cappatura”, is obtained from external massaging with vegetable charcoal combined with flour and olive oil. A whole size has a weight of about 2.2Kg.
